Sweet Potato Casserole



If there’s a rule that sweet potato casserole is only for the holidays, we’re breaking it. This sweet casserole is as much a dessert as it is a side dish. It’s one of our favorite comfort foods.

Ingredients:

Casserole

  • 3 cups of sweet cooked potatoes
  • ¾ cup of Southern Cane Pure Cane Sugar
  • ½ cup of brown sugar
  • ½ cup of milk
  • 3 eggs
  • 1 tsp. vanilla
  • ½ stick of butter
  • Dash of salt
  • Topping

  • ½ stick of butter (softened)
  • 1 cup of brown sugar
  • ½ cup of self-rising flour
  • ¾ pecans
  • chocolate sauce (optional)
  • Directions:

    Casserole

    1. Preheat oven to 350°F.

    2. Combine all ingredients together with mixer and place in a 9 x 13 pan.

    Topping

    1. Combine all ingredients in a medium, then transfer mixture to a baking dish.

    2. Put topping (crumble) on top of sweet potato mixture. Evenly spread topping across sweet potato mixture.

    3. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
